I am a former USDA Compliance Officer and you should contact your local health department for guidance. You cannot sell your brats to restaurants or retail stores only end users under USDA regulations

processhead I worked for the USDA for 34 years both in the field and in Headquarters and they have an investigative branch that handles recalls that detains and controls volatile products to insure consumer safety. USDA worked closely with the FDA but I can never remember working with the CDC.
