What we talked about We talked about a wide range of things, from Antelope Sausage made with Juniper (yeah, apparently as bad as it sounds) to how Jon would immediately turn into a dictator if he ever gained total control of the world! Just kidding! In all honesty, what Jonathon says around the 40 minute mark isn’t a really well-crafted idea, it is something that he has played with in his mind a few times but hasn’t spent enough time pulling apart to see if he really likes it! Meatgistics Podcast: Top 5 Meat Hacks for Snack Sticks Each week, Jon and Austin break out and critique a new beer and different sausage while they discuss everything about meat. Today he has Bid Idjit from Dugges Brewery and this was a serious beer! To quote an old Monty Python skit this is an excellent hand to hand beer! Filled with lots of flavor it is also extremely high in alcohol! Top 5 Meat Hacks for Making Snack Sticks #1 Add humidity by adding an oversized pan and sponge or dry wick material. - What we are trying to do here is avoid “the stall” which is when the evaporation energy matches the thermal processing energy - Adding relative humidity makes it harder for evaporation energy to slow down the cook - We are making it easier for the water to evaporate as we are increasing the surface area. - During a short 4 hour period we were able to empty a very large oversized water bowl in our PK 100 Smoker with a dry wick towel. #2 Use a binder and a meat mixer - Protein extraction is the key to making good sausage. It prevents the fat from rendering out of the meat during the long smoking process. - Binders help everything stick together - Prevents fat out - Much easier to get protein extraction with a mixer than hand though it can be done by hand as well - All binders act differently but have similar aims. Carrot Fiber is best used for fresh sausages like bratwurst. #2A Know your additives -Seasoning (salt content) -Sure Cure (botulism spores) -Sure Gel / Super Bind / Soy Protein Blend -Encapsulated Citric Acid -Sodium Phosphate (maybe) -Sodium Erythorbate (accelerator without the tang) -Smoked meat Stabilizer -Cheese -Water #3 Pull at 130 and finish sous vide - Parksider is a well established Meatgistics member and has shared plenty of great tips and information on here, but this is the one that probably has helped more people than any other user tip. - As I talked about on the podcast vacuum packing is really only necessary if you are using a Sous Vide Circulator that pulls water in and circulates it back out. In that case you run the risk of clogging a filter with fats, oils or even small pieces of casings. Surprisingly, finishing it up without a vacuum bag does not cook any smoke flavor or any flavor out of the meat. #4 Fat content or raise pH - For most sausage you want to be between 20-30% fat content, we always prefer pork fat as it is creamy, very light in color and has very little taste. - Cold Phosphate raises the pH of the meat which lets it bind more effectively to the water, helping more of it stay in the meat during the cooking process. - Fat effects the flavor by melting in your mouth and coating it, letting you experience the flavor more intensely and longer. - Too much fat will render almost no matter what #5 Start your smoker within 20 degrees of products living weight -Don’t stress proteins -Prevents case hardening -Get as close to this as possible, a propped lid/door will bleed heat from your smoker or oven but you have to be able to monitor ambient temperature Watch Meatgistics Podcast: Top 5 Meat Hacks for Snack Sticks

Beautiful Beverages Austin had Pulp Theory Hazy IPA from Odell’s and he is in love with it, he is disappointed that it is going to be a seasonal and he cannot get it all year long Jonathon had Scarlet Fire from Tight Head Brerwing a great clean red ale at 5.6% alcohol it is a perfect beer for meals or sitting around and drinking with your buddies. Kobe Burgers vs Normal Burgers Since we had John, who is a Cowboy on we decided to see what the actual difference is between a Kobe Burger and a regular 80/20 burgers. We made burgers for each of us and then let Patrick give them to us without us knowing which is which. Their is a clear difference in the taste between the two. Now, you can see it click in my mind that oh no, we might have guessed wrong! Enjoy us being bafoons. John Heinen John is a modern day Cowboy (if you couldn’t tell from the hat!) that spends the vast majority of his time out on his horse surrounded by nothing but cattle and pasture land. He talks about doing some quick veterinary medicines from shots to helping birth them. He talks about how crazy his busy season is and surprisingly that poachers are still an issue for Cowboys. He also talks about his god and tells a quick story with a badger. Meatgistics Podcast: Travis Frank Each week, Jon and Austin break out and critique a new beer and different sausage while they discuss everything about meat. This week we welcome Travis Frank, a TV and Radio Host, Fishing Guide and TV Producer. Listen for Jon's teeth to chatter when he tells us about his terrifying Alaskan Flight! Tighthead Brewing This week we dug into a few beers from Tighthead Brewing who were nice enough to send us some samples! Tighthead is a Rugby position and these beers clearly have a manly willingness to fight in them, more than Austin could handle for sure, Jon was of course perfectly fine. Austin had the Irie IPA and he went on and on and on about how good it was but who knows what goes on in his head. Seriously though, even Jonathon enjoyed a sip of this after the podcast and that is high praise for an IPA from him! Jonathon tried the Powerful Pils a pilsner that greatly pleased his Czech roots! This was what we want when we try pils, a little bit of a bite without being overpowering. This was a well-crafted beer without too much of a bite but with plenty of taste! Seriously though, these beers were WELL worth the wait and I highly urge you all to look for these beers in your local stores. I know the IRE IPA is available here in Wichita stores and we are hoping the others make an appearance soon! Go buy some so more places send us free beer! Meatgistics Podcast: Steak Taste Testing Each week, Jon and Austin break out and critique a new beer and different sausage while they discuss everything about meat. This week we were hoping to have the founder of the SCA as a guest but he had to cancel the last minute So, we cooked up some steaks and tried 6 different seasonings Then we let the commercial sales guys rate them from best to worst We also talked about some of the most delicious, or disgusting foods from around the world.. Steak competition We had steaks on the brain as we were hoping to have Brett from the Steak Cookoff Association on the podcast but do to unforeseen circumstances he had to cancel. We hope to have him on in the future but that wasn’t going to do anything for our hunger for some perfectly cooked beef, luckily Jonathon is a fairly dab hand at a reverse sear so we went and bought steaks, seasoned them with 6 different seasonings and then fed our commercial salesmen an unexpected but delicious late lunch. We then had them rate them from best to worst. The seasonings used were: Walton’s Ultimate Steak Seasoning Kosmos Cow Cover Salt and Pepper Butchers BBQ Steak and Brisket Steak for Troops SCA Steak Seasoning We let 5 of our commercial salesmen blind taste test them and decide which they liked the best. 4 out of 5 (and 6 out of 7 if you include Austin and Jonathon) picked Walton’s Ultimate. Now, I didn’t even want to do it blind but the head of commercial sales convinced me to hide which was which. Some could say that the Walton’s was still identifiable by the taste alone but even with that it would still have been mostly Walton’s. Jonathon’s list was #1 Walton’s #2 Kosmos #3 Steaks for Troops #4 SCA #5 Butcher BBQ #6 Salt and Pepper (1st person to figure out why the hyperlink for that one takes you to my profile wins something small. Beautiful Beverages Jon went back to the well of Crane Brewing and had Thanatos, it is the most complex sour beer he has ever had and at 11.5% it’s just an amazing taste. Some of the port comes through the taste and while it does have a stronger alcohol taste it isn’t a burn. Austin had some Azzacacia Hazy IPA and he described it as a light beer IPA. He said he really liked it but it sounds terrible to me! Guest Today we spoke to Brittany Waldman from Pass It On Outdoor Mentors! Brittany is the Director of Field Operations- Pass It On- Outdoor Mentors and is a Mentor herself. She has was matched with a “little” and found the experience rewarding, Mike Christensen (who has been on the podcast as well) noticed the love she had for this cause and was smart enough to bring her on full time. Brittany is someone who has figured out that helping others selflessly is one of the most self-rewarding things you can do! She has made it her mission to take High School aged kids who shoot trap off the trap shooting range and into the field. We all need to try to be as great of an ambassador for hunting as she is! Meatgistics Podcast: Back Country Hunters & Anglers Each week, Jon and Austin break out and critique a new beer and different sausage while they discuss everything about meat. BHA Statement Kansas BHA members value the freedom to hunt, fish, watch birds, trap, hike, camp, and engage in other outdoor pursuits. But as Aldo Leopold stated in A Sand County Almanac, “of what avail are forty freedoms without a blank spot on the map?” Kansas has very few ‘blank spots’ and has been required to be creative in making any ‘spot’ remotely close to ‘blank’. Our mission is to protect and preserve the few public lands and waters we have within our borders, open access to new public lands, and endeavor to find new ways to create ‘spots’ that have some feeling of ‘blank’. Because of the lack of public lands, most Kansans feel no connection to public lands or wild places. Therefore, our long-term mission is to raise awareness and educate Kansans of the benefits and necessity of public and wild places. Meat Matters For the entirety of this podcast, we had the pleasure of talking to Kurt Ratzlaff with the Kansas Chapter of Back Country Hunters and Anglers (BHA). Walton’s and BHA have been working together to get more people physically involved with the outdoors, whether through hunting or meet-ups where volunteers get together and clean up a wild area. Kurt and Jon discussed one aspect of the Great American Outdoor acts that Jon was concerned with, the permanent funding of the Land, Water Conservation Fund LWCF. For some background information the Federal Government already controls 28% of the land in the USA, and the goal of the LWCF is to continue to buy and preserve that land. Jon watched https://youtu.be/LYnpBrAcsZg where it was argued that the LWCF should work to clear the backlog of the deferred maintenance on National Parks instead of buying new land. Bruce and Brandon were great guests and great ambassadors for the National Wild Turkey Federation. We talked about everything from Turkey hunting in Texas to Brown Bear Hunting in Alaska! Some of Bruce’s Bear stories will absolutely make you shudder either in fear or excitement. As soon as he brought up Bear hunting I knew I wouldn’t be able to concentrate again until we talked about that. I have a dark obsession with anything that is capable of hunting humans! And as Adam Greentree says “mate, monsters are real, and their called Grizzly Bears! It’s not their fault but they are monsters!” I highly encourage you guys to go find your local NWTF chapter and get involved.
