Instructions Place cashews in a bowl and coat evenly with olive oil, or oil of your choice. Now sprinkle on your seasoning of choice. We decided to try Salt and Vinegar Wingshake and the Cajun Rub. Now lay them out on a single level of a Non-Stick Mesh Basket, or another non-stick surface, and place in your smoking chamber as far from the smoke as possible. We wanted to have the Cashews retain as much of the creaminess as possible so we decided to cold smoke these. We used the Flip Professional Smoke Box and some Hickory Wood Chips to provide smoke but add as little heat as possible. So, Will it BBQ?
Flip Professional Smoke BoxThis would be a definite yes. The two different flavors offered wildly different tastes but both were delicious. The Salt and Vinegar ones had more upfront taste and they had a nice caramelized style coating on them from what little heat did get to them. The Cajun ones didn’t have a strong taste at first but had a very pleasant warmth to them that worked well with the smoke and the creaminess of the cashews. Since we did this a week ago I have already made a large batch of this at my house and my wife and I love them!

Instructions The first thing we did was remove the tough outer skin, depending on how they were butchered this might either be easy or difficult. We bought them from a good local butcher so this was fairly simple, just a quick slice and then the skin peeled away fairly easily. We then sliced them into 4 slices per testicle. Looking back we should have cut these much thinner, I would recommend somewhere around 1/2 inch thick pieces. We then added some Bloody Mary Wing Shake to some flour and took 4 eggs, added some water and whisked them together to create an egg wash. We put them in the flour then the egg wash, then back in the flour, back in the egg and finally back in the flour. Next, we heated some peanut oil to 350° and fried these for a few minutes until they were golden brown. We temped them after 4 minutes and they were around 170° so we pulled them. Finally, we squeezed some lemon juice onto them and tried them out. So, Will it BBQ?
Aluminum Cooking TraysNot the way we did them, no! The texture was somewhat rubbery and chewy. Now, we have heard from people that part of that might have been that we cut them too thickly or that we should have par-boiled them first. IF, and that is a BIG IF, we ever try this again we will cut them thin for sure! However, I will say that the breading was delicious, the Bloody Mary works very well with the flour for a fried breading and we will be using this for future recipes.

Utensils Needed Instructions This depends on if you have purchased a boiled Octopus or not. We purchased one that was if you purchased one that was not you need to boil it first for about 30 minutes or steam it. Some people say that steaming it makes it sweeter. When you buy a preboiled one like we did all you need to do is separate the legs from the head, and if you want, sprinkle seasoning or olive oil on them and put them on the grill for a few minutes. We found it hard to get a char on the outside because of the high water content of the meat. It is important that you slice it very thin when eating. So, Will it BBQ?Absolutely! This worked really well in my mind as the Octopus had a very mild fish taste, similar to crab, or more accurately the fake crab meat you buy in stores that is usually some sort of flake or white fish. The real star here was the dipping sauces. We made one that was just a stick of butter in a pan that we added some Signature Pork Rub and it was excellent. All the sauces we dipped it in were excellent though! If you want to wow dinner guests this might be the best one we have done for that! I said it above and I will say it again here, it is VERY IMPORTANT to slice this thin. Thicker pieces become incredibly chewy and difficult to eat but sliced thin I thought it was wonderful! Instructions While this cheese will hold its form through smoking temperatures we still recommend you cold smoke it to minimize any malformation of the cubes. Place your cheese in aluminum cooking trays or foil pans and poke holes in the bottom of a foil pan or other container to allow the smoke more access to the cheese. Get your smoke box loaded with whatever wood chips you want to use, we used pecan and get them lit. Place the smokebox on the lowest shelf and the cheese on the highest. This will keep the cheese away from the heat source and the smoke will pass through the cheese on its way out the top vent. Close both vents most of the way allowing just enough air to keep the flames going. How long you leave it in there is really up to you, we smoked ours for 30 minutes but if you are looking for a heavier smoke then you can leave it in longer, or shorter if you want less of a smoke flavor. Not so fast, while the Cheddar, Mozzarela, and Hot Pepper all benefited greatly from 30 minutes with some Pecan smoke, the Swiss and the Ghost Pepper did not! The swiss picked up a taste that I did not care for and the Ghost Pepper was just too strong to notice any changes, it was just HOT!

Instructions The beef heart should already be "butterflied" for you so you do not need to do that. I'd highly recommend you try to remove the membrane from the inside of the heart first, if you do not then this will become VERY chewy after cooking. There is most likely a good amount of hard fat on attached to the outside of your heart, remove all of this as it will not cook well with the method we are using. Slice the heart very thin, this is a strong muscle and can be tough. Chop your vegetables and add them, the heart and your seasoning to a vacuum bag and vacuum seal it and let it marinate overnight. Instructions If you purchased an entire squid, as we did, then you need to start by separating the hood from the tentacles. You can do this by making a clean cut just above the head. Then you need to remove a ball-like piece from the head, this will contain the beak, it comes out easily just feel around for it and squeeze it out. Then you need to reach up into the hood and remove the internal guts. You should also be able to pull out the quill at this point, the quill is a clear plastic looking piece that is roughly the size and shape of a feather. Next clean everything very well under water. Then lay the hood flat and either cut or pull off the wings. Then cut through the upper half of the hood leaving the bottom half intact, this will make the squid more tender and allow you to stuff it with more pineapple. Stuff it with pieces of pineapple and sprinkle on the seasoning of your choice. Then go ahead and grill it until it has the desired consistency, about 3-5 minutes a side should do it. Get some dipping sauces ready and enjoy! So, Will it BBQ?

I like calamari in pasta dishes and when it is fried, grilling it was very good, but the texture was not as good as when it is fried, the hood was by far the best part though. ChocolateObviously, Smores will BBQ, doing them on a grill is basically the same process as over a fire but doing it on the BBQ might have a few advantages. With normal smores, you are relying on the heat from the marshmallow to melt the chocolate and you can only do a few at a time.
Some people might say doing it this way takes all the fun out of it, the messy gooey fingers are part of it and if you have kids I’m sure that’s true but if you are making larger quantities for a dessert then this is the way to go. We lined the bottom of a foil pan with graham crackers then we laid a few pieces of chocolate on top of those and put the marshmallow ontop of that. We left the top layer of graham crackers off until just before it was done so we could easily monitor their progress.
We did a few where we cut a slit in the marshmallows and inserted a small piece of chocolate to see if that made any difference in the finished appearance.
We had our grill running at 450° and we let them cook for about 10 minutes.
So, Will it BBQ?
I sprinkled some Cinnamon toast shake on these and just like always that made things a lot tastier!So, in the end, is this any better than doing it over a fire? Well that depends, if the little ones want to use something like the Fire Fishing Pole and make an evening of it then this might take some of the fun out of it. However, if you are just wanting to make some delicious gooey smores for a lot of people then this is the way to go!

Instructions Cold smoking is adding smoke to something and not adding any heat. We did it using a Flip Professional Smoke Box in a Vertical Smoker and placed it on the bottom of the smoker and put our cheese on the top shelf too keep it as far away from the heat source as possible. We lit the chips, opened the side vents all the way and the top vent 1/2 way and smoked it for an hour. When we took them out of the smoker we vac packed them and kept them in our fridge for a week to let the smoke mellow out a little bit. So, Will it BBQ?

Signature Pork RubThe wine and butter sauces was great, it had a really nice taste to it but the snails just had way too many issues to be considered good, so no, it will not BBQ. The taste was okay, similar to a clam but the texture and toughness were terrible. It was like chewing rubber. You should remove the tough foot of the snail to make chewing slightly easier.

Instructions One of the suggestions we got for will it bbq was JackFruit. Neither Austin or I had ever tried Jackfruit so we started doing some research and testing. We found that there are two basic ways to eat Jackfruit. The first is the ripened fruit which you can just eat like you would any other fruit or use in a dessert and the other way is the green or un-ripened fruit which is what a lot of people are using as a meat substitute. So we went out and got some of both.
Boning Knife
First, let’s talk about the un-ripened fruit or green jackfruit. It comes in a can with either water or syrup, we bought the can with just the water. You need to rinse it and dry it first, then there might be a part of the core attached to the pieces so you should chop those off. Then you want to put them in a pan with some BBQ sauce and onions and garlic and saute them for about 5 minutes. We wanted them to taste like that had come off the bbq though so instead of doing this with a stove or oven we put them in our pellet grill for 30 minutes at about 400° and added more BBQ sauce and a little bit of water. I went back to it after about 15 minutes and mashed it up. I did this again once it was totally done. We used Sizzlin Green Chili as our BBQ Sauce.
The other way to eat Jackfruit is just like you would any other fruit. First your need to be very careful though, this stuff is extremely sticky and will stain clothing apparently. So we put down a stark disposable cutting board and even oiled the blade of our knife. First you need to cut out the core, it was fairly simple to do, just be careful and take it out in sections if needed. Then you have all these “pods” with the flesh of the fruit around a seed. You need to separate these from the skin, I found a knife was the easiest way to do this and then remove the seed as well as a thin skin that surrounds the seed. After that there is something that resembles corn silk around the side of the fruit that has to be removed as well. This stuff is very sticky so make sure you are wearing gloves when doing it! So just eating it was okay but we wanted to see if it would BBQ so we put it on a non-stick mesh grilling basket and sprinkled cinnamon toast shake on some of them and grilled it for 10 minutes at 400°
So, Will it BBQ?
The Green Jackfruit had an appearance and texture that was surprisingly close to a real pulled pork sandwich. It was not an exact match but it was pretty close and certainly tasted nothing like a fruit. I will almost certainly be making this for my vegetarian wife at some point, so yes, it will BBQ!
The fresh Jackfruit was difficult to prepare, if you have the option of purchasing some that has already been cut and seeded I would go with that but it was still very tasty once we BBQ’d it! It was even tasty before, it had a very fresh taste to it, similar to cantaloupe but less juicy. Once we BBQ’d it with Cinnamon Toast Shake it was really good! Better than either the Watermelon or Pineapple that we had done previously.

Instructions Austin and I have been working our way through some suggestions from our Meatgistics and Youtube viewers and today we decided it was time to try Smoking Ice Cream!
Flip Professional Smoke BoxWe cold smoked the ice cream in a Vertical Smoker with the Cameron’s Flip Professional Smoke Box with Pecan Wood Chips. We tried two different Ice Creams, Artisan Vanilla Bean and a Peanut Butter & Candy one.
We wanted to make sure we did not oversmoke them so we did it for just 5-10 minutes to see what taste that would give us. We set the Smoke Box all the way on the bottom shelf and the Ice Cream on the top shelf to make sure that it was as far away from a potential heat source as possible. We also made sure to do it on a cold day to try to prevent as much melting as we could.
Once we were done with testing the actual smoked Ice Cream we added some hickory smoke powder to the left overs that we hadn’t smoked to see what that would give us!

This was the best “experiment” we have tried yet! It was amazing, the Vanilla was a little bit better since it really allowed the smoked flavor to shine through but both were very good. The Hickory Smoke Powder was a great and easy way to add smoke flavor without having to set up the smoker!

In the past we've tried smoking Tea, Coffee and Whiskey and if you haven't seen the videos they were all terrible. I don't mean terrible in some hyperbolic sense, I mean they were hardly drinkable, in fact I don't think I took more than a sip of the tea or coffee, the Whiskey of course could not be wasted and had to be drank. However we have somehow blocked out those experiences and are going to give this another go, this time with Beer! So we did all of these two ways, we tried each one in the smoker and cold smoked for 20 minutes, then put back in the fridge for 20 minutes to cool them back down and we added just a pinch of hickory smoke powder to each and mixed it in until the powder was dissolved. There was some argument over which method was going to cause more carbonation loss, I think it will be the cold smoking since so much surface area is going to be exposed and Austin thinks that mixing in the hickory smoke powder is going to cause us to lose more carbonation. We will find out who was right and if this will BBQ or not?! So, Will it BBQ?

Instructions We are trying two methods, a traditional cold smoke and adding hickory smoke powder directly to the soda. Pour the desired amount of soda into a foil pan and put in a smoker on the top shelf. Put your Flip Professional Smoke Box towards the bottom of your smoker and light it. Close the top vent and open the bottom ones and smoke for 5-10 minutes. For the second method use just a pinch of hickory smoke powder and mix into the soda before drinking. So, Will it BBQ?
The Flip Professional Smoke BoxSome were better than others and we each had different favorites on the cold smoking but we both ended up thinking the one that we thought was going to be the worst was the best! I liked Mountain Dew best and Austin liked the Coke best. For adding hickory smoke powder both the Dr Pepper and the Cream Soda were good, not just not bad they were good! Especially the cream soda, the smoke powder added just a nice hint of smoke that really worked with the cream soda! So no, it will not BBQ if you try to apply actual smoke but if you use Hickory Smoke Powder it can turn out pretty good!

Utensils Needed Instructions We tried two different techniques to smoke Mayo. First, we put some mayo in foil pans and placed them in the smoker at 200° for 15 minutes, then turned off the heat and let them continue to smoke for another 15 minutes to see if they would pick up smoke. Then we also put some mayo in pans and added a level teaspoon of hickory smoke powder to them to see if this would give us a different result. So, Will it BBQ?We didn’t really feel like just eating heaping spoonfuls of Mayo so we made some BLT’s and smeared the mayo on that. We toasted the bread and added some imitation bacon we had recently made, tomatoes, lettuce and some provolone cheese as well. The Mayo that we put in the smoker picked up a slightly bitter taste while the Hickory Smoke Powder had a nice smokey flavor but was still smooth. So I would say that they both BBQ but adding the Hickory Smoke Powder was a better (and easier) way to go about it!

Utensils Needed Instructions Pour the desired amount of whiskey into a foil pan and place in the smoker. Since this is a liquid we want to cold smoke it so we have minimal evaporation. To do that we used our Amaze-N-Tube Smoker filled it with apple wood pellets with a 36 in Vertical smoker. We left it in there for 30 minutes with the dampers 1/4 open. So, Will it BBQ?Listen, to be honest with you whiskey isn’t really either one of our drinks, we are beer guys so the expectations were a little low going into this. However even low expectations couldn’t prepare us for how bad this was! Just watch the video to see exactly how little we liked this! This was a NO will not BBQ! As a control we did take a drink of the Whiskey without smoking it and it was much better in my opinion!

Utensils Needed Instructions The egg shells are air permeable so the smoke can pass through the egg shell, however a lot of store bought eggs are sprayed with a solution that prevents this, so you have to wash and dry your eggs before smoking them. Place them directly on the grates of your grill or smoker at 225° and let them smoke for an hour. After the first hour flip them over to the other side and smoke for another hour. Be careful not to let your smoker get above 250° as this might cause the eggs to burst and you will have a mess in your grill or smoker. So, Will it BBQ?From a standpoint of did this give us a cooked egg like a hard boiled one, the answer is yes. However, our goal was to see if this would be an improvement on the traditional hard boiled egg and sadly the answer is not really, no. There was a very little amount of smoke that was picked up but it was not enough to justify letting them smoke to 2 hours. We thought we might not have gotten enough of the spray off of the egg shell to let the smoke through the shell but there was actually a smoke ring in the egg so the smoke did penetrate it just did not make much of an impression. Hey, they can’t all be winners!

Smoked Candy Will it BBQ? Chocolate and Candy!
With Halloween right around the corner we wanted to see what would happen if we took some chocolate and cold smoked it. Once I got to the store though I saw some other candy and decided grab some of that as well!

Utensils Needed Instructions Take whatever Chocolate or other Candy you want to try to add a smoke flavor to and put it in a foil pan. Since the Chocolate and some of the Candies might melt you are better off trying to do a cold smoke. I used the Amaze-N-Tube Smoker and filled it with Hickory Pellets, I then used a propane torch to get them light and put them in our smoker with no heat. I let them sit in the smoker for an hour and kept the smoldering pellets as far away from the candy as possible. So, Will it BBQ?
Candy of your choiceSome of you are going to think we are crazy for even trying this but the Reeses Peanutbutter Cups, the Hershey’s with Almonds and the Snickers all came out really tasty! Picked up a good amount of smoke but wasn’t overpowering, similar to what you get with a s’mores if you held your marshmallows over a fire. We also did Peach Rings, Gummy Bears and Candy Corns to see how they would do, really I just wanted some Candy! The peach rings were really good, they tasted a lot like a grilled peach, the Gummy Bears were alot better without the smoke and the candy corns are disgusting no matter what! We also did some gum just to see what would happen, they did not pick up much smoke and the small amount that was picked up did not add anything good to the gum.

BBQ'd Ziti Will it BBQ? Ziti!

Ingredients1 Package of Ziti
Instructions This works best with a homemade red sauce but you can use a jarred sauce if you have to, either way use the Spaghetti Sauce Seasoning to add a little zip to your sauce. After boiling your pasta (undercook it slightly as it will cook more in the smoker) put it in a foil pan and add your sauce, then put spread out your Ricotta Cheese and Mozzarella cheese in a layer above the pasta and sprinkle on some Parmesan as well. Put it in your smoker and smoke for about 45 minutes at 375°, remove and serve hot. So, Will it BBQ?
Desired amount of Red Sauce
1 Cup ricotta Cheese
Sprinkle of Parmesan Cheese
1 lb Mozzarella CheeseThe cheese and sauce are going to be the two main vehicles for the smoke here and while I don’t think either of them picked up a lot of smoke it was enough to give it a nice smokiness without being overpowering. This is a definite yes, will BBQ!
